Mexican EnchiladasPreparation time : 40 min. | Serves 12 rolls

This Mexican Enchiladas recipe is prepared with corn tortillas with stuffing of ground beef and yummy white sauce. You can also prepared this recipe by deep frying instead of baking but in that case you will have to add cheddar cheese in stuffing instead of sprinkle it on top, this also become one of a delicious snack.

Ingredients:

12 corn tortillas
1 medium size onion
2 tbsp chili powder
2 lb ground beef
1 tsp oregano
1 tsp garlic salt
2 tbsp oil

For Sauce:

1 cup shortening
2 tbsp chili powder
2 tsp garlic salt
1 cup flour
6 cup water
2 cup shredded Cheddar cheese
Ketchup as required for topping

Procedure:

1. In a sauce pan, sauté onion in oil for just 2 min.
2. Add beef and seasoning of chili powder, oregano and garlic salt and cook until all the water released form meat would get dry and become brown.
3. Roast flour in shortening until pleasant smell starts to come, then add seasoning of chili powder, and garlic salt and mix well.
4. Gradually add water and stirring constantly so that lumps would not form and then let the sauce boil.
5. Take a tortilla piece spoon 1 tbsp of beef mixture in the center and pour 1 tbsp of prepared sauce on it.
6. Wrap the tortilla rolls tightly using toothpick and place them on a baking pan.
7. Sprinkle the cheddar cheese and drizzle ketchup on top of the rolls and bake for 20-25 min at 350 degrees F until become light brown in color from top.
