<p>Haleem is very famous street food of South Asia and also prepared at home at special occasions. Its a complete meal full of proteins, carbohydrates and other essential nutrients. It main ingredients are mixture of some grains and meat in proper ratio. Its also a bit spicy in taste. Haleem is usually garnished with specific seasonings before being served.</p>
<h4>Ingredients:</h4>
<p><strong>For Korma:</strong></p>
<p>1 kg beef (boneless small pieces of under cut)<br />
3 tbsp ginger garlic paste<br />
1 cup yogurt<br />
2 cup caramelized onions<br />
3 cinnamon sticks<br />
6 cloves<br />
6 green cardamoms<br />
2 bay leaves<br />
3 black cardamoms<br />
2 star nuts<br />
Salt to taste<br />
2 tbsp red chili powder<br />
1/2 tbsp turmeric powder<br />
1/2 tsp nutmeg and mace powder<br />
1/2 cup oil</p>
<p><strong>For Grain Mixture:</strong></p>

<h4>Procedure:</h4>
<p><strong>Preparing Grain Mixture:</strong></p>
<p>1. Soak haleem grain mix in water for 2-3 hours.<br />
2. Heat oil in a large sauce pan, add pack of haleem mix and soaked grains (remove water) and cook over high heat for 5 min then add 10 glass water and cook over high heat till boiling. Then reduce the heat to simmer and let it cook till all the grains tender completely.(Quantity of water may vary according to the size of your pan.)</p>
<p><strong>Preparing Korma:</strong></p>
<p>1. Marinate beef with the ingredients mentioned for korma except oil and leave for 30 min.<br />
2. Heat oil in a heavy sauce pan and add the marinated beef. Cook over high heat for 5 min and stir continuously, then reduce the flame to simmer and cook till beef would get tender. In order to save time cook korma in pressure cooker as beef take longer time to cook.</p>
<p><strong>Preparation of Haleem:</strong></p>
<p>1. Separately blend the cooked lentils and korma using hand blender make sure that ingredients would not blend completely, you just need to slightly blend the grain and meat.<br />
2. Now in a large heavy sauce pan combine both the blended mixtures of grain and meat and add 4-6 glass of water. Cook over medium heat and keep stirring using large wooden spoon.<br />
3. When haleem starts bubbling taste it if you feel is there nay need of spices and salt then add it accordingly and leave it to cook for an hour over slow heat. Throughout this process every ingredient should mix well together and for this you have to stir continuously while cooking so that it may also not stick to the base of pan.<br />
4. After that take out the haleem in serving bowl and serve with the seasoning ingredients.</p>

<h4>Procedure:</h4>
<p>1. Marinate beef fillets for 15 min. with the ingredients mentioned to prepare beef.<br />
2. In a grill pan heat oil for shallow frying and cook beef fillets over medium heat until become brown from both sides. Then cover the pan and cook for 8-10 min until meat would get tender.<br />
3. After that take the beef fillets out from the pan and add oil in the same pan to cook chicken liver.<br />
4. Add ginger garlic paste, onion and chicken liver and cook over high heat for 5 min.<br />
5. When onion would get soft add mushroom and black pepper and cook for 5 in more over same heat. Chop liver and mushroom pieces while cooking so that they look like mince.<br />
6. Now Cool the prepared beef and liver to room temperature. Divide puff pastry into two pieces roll out both pieces separately, place beef fillets on one of the piece and spread chicken liver and mushroom mixture over the fillets. Brush the sides of the dough with egg and cover the topping with another puff pastry piece sealed the sides properly using fork and brush the top with egg.<br />
7. Place the wellington in baking dish and bake for 10-12 min at 350 degrees F.<br />
8. When the beef wellington turn into golden brown from top take it out from oven and cut into thick slices after cool it slightly.</p>

<p><strong>For Nihari:</strong></p>
<p>2 kg beef boneless shank piece or bong (cut into six pieces)<br />
1¼ cup oil<br />

<h4>Procedure:</h4>
<p>1. At first prepare soup of bones with 5-6 glass of water, whole garlic and onion. Let it cook till marrow gets tender.<br />
2. Meanwhile in a sauce pan heat oil and fry chopped onions till become golden brown in color. Then add ginger garlic paste, chili powder, salt, turmeric powder, coriander powder and deggi mirch along with beef shank pieces and cook over medium-high heat till become meat color starts to change into brown.<br />
3. Add water to beef so that beef pieces completely dip in the water then make a pouch of muslin or mulmul cloth filled with fennel, star nuts, dry ginger, and bay leaves. Put this pouch in pot of beef and let it bring to boil over high heat then reduce the flame to simmer and cook until meat gets completely tender.<br />
4. When meat is done remove oil from the top of the curry and reserve it for serving and add prepared marrow soup. Let it cook further for 30 min.<br />
5. Dissolve wheat flour and graham flour in ¼ cup water and add it to the curry when curry gets thick reduce the flame add nihari masala mix and cook it for 15 min.<br />
6. Serve the spicy nihari with garnishing of chopped coriander, green chilies, lemon wedges and ginger.</p>

<p>1.	Preheat broiler.<br />
2.	Marinate steaks with salt and pepper.<br />
3.	Heat 1 tbsp of the butter over medium-high heat, and then cook steaks until become brown from both sides.<br />
4.	 After that spread cooked steaks onto the broiler pan and sprinkle mustard over the whole steak pieces.<br />
5.	Broil for 2 to 3 min or more until steaks are cooked completely. Make sure that there should be at least 3-4 inches gap between broiler pan and heat.<br />
6.	Meanwhile heat remaining butter in the same skillet in which steaks are cooked then add half of the herbs, onion and breadcrumbs and immediately remove from heat.<br />
7.	When steaks are done pour the herb butter over the steaks and sprinkle remaining herbs.</p>

<h4>Procedure:</h4>
<p>1.	To prepare pastry, sift together flour, curry powder and salt into a large bowl.<br />
2.	Mix the dry mixture with shortening to make crumble mixture and then add water accordingly to prepare soft dough.<br />
3.	After that roll out the dough into slightly thick size and then cut it into 8” circles. Spread wax paper or damp cloth over the circles.<br />
4.	Now to prepare stuffing heat oil in a heavy skillet and sauté onion and bonnet pepper for just 2 min until become soft.<br />
5.	Add the ground beef, salt, pepper, curry powder and thyme and mix well.  Cook the meat gently with the spices until become brown in color, it would take 10-15 min.<br />
6.	Add the breadcrumbs and stock and simmer for 15 min until all the excess liquid absorb in the meat.<br />
7.	After that uncover the prepared pastry circles and put 2 tbsp on meat stuffing in the center. Wrap the pastry by joining two opposite sides and seal it tightly with fingers or fork.<br />
8.	Place the stuffed pastries over the greased baking dish, brush the top with beaten egg and then bake in preheated oven for 30 min at 400 degrees F.</p>

<h4>Procedure:</h4>
<p>1.	Coarsely ground peppercorns using pepper mill or rolling pin.<br />
2.	Marinate each steak piece with peppercorns, ginger garlic powder and salt.<br />
3.	Heat oil in skillet and cook steaks over medium heat until become brown from both sides it would take 4-5 min.<br />
4.	After that transfer the steaks onto the serving platter and then prepare sauce.<br />
5.	Heat butter in the same skillet and sauté green onions for 2-3 min, then add chicken broth and simmer for 5-8 min until the sauce seems to slightly thick.<br />
6.	Add whipping cream to the sauce and cook on slow heat for 1-2 min, keep stirring while cooking to mix it evenly and avoid burning.<br />
7.	Add butter and let it melt, then pour the sauce over the cooked steaks and serve hot with creamy mash potatoes.</p>

<p>1. Take a heavy pan for brisket and add water so that water level should 1-2 inches above the brisket.<br />

<p>4 beef steaks (your favorite cut)<br />
½ cup soda water or sprite<br />
½ cup white vinegar<br />
1 tbsp brown sugar<br />
1 tsp seasoned salt<br />
½ tsp black pepper<br />
½ tsp onion powder<br />
½ tsp garlic powder</p>
<h4>Procedure:</h4>
<p>1. In a shallow pan, put steak pieces and pour sprite and vinegar over the whole steaks and then leave for 1 hr. in fridge.<br />
2. After that take out steak pieces from the mixture and rub with dry ingredients including brown sugar, seasoned salt, black pepper, onion and garlic powder and leave for 30 min to marinate properly.<br />
3. Meanwhile preheat your grill pan to medium high heat and then grill steaks until become tender and medium brown from top. It would take 10-15 min.<br />
