Omelette
Preparation time : 10 mins. | Serves 4 persons

This Spanish omelette recipe is another addition to one of our quick and easy recipes as it cooks within 10 minutes. Unlike other omelette recipes, very few vegetables are used in the preparation mainly the stuffing consists of tomatoes. You may also add cheese in the stuffing to make its cheesy omelette.

Ingredients:

3 eggs (lightly beaten)
1cup soft tomatoes (chopped)
1green bell pepper (coarsely chopped)
1small onion (chopped)
1 tsp chopped parsley
1 tsp salt
3 shakes of pepper
2 tbsp oil

Procedure:

1. Cook green pepper, onions and tomatoes with oil on medium heat for 2-3 mins. until they incorporate well with each other.
2. After that add salt, pepper and parsley and mix them with the vegetables and then take it out on a plate.
3. Now heat the remaining oil and pour the beaten eggs onto the pan move the pan in circular direction so that egg would evenly distribute over the whole base. Cook the egg on low heat for 2-3 mins.
4. After that spread the prepared tomato mixture onto the egg and fold it. Cook for further 1-2 minutes until become light brown and then take out on serving platter.
