Creamy Vegetable SoupPreparation time : 20 mins. | Serves 4 persons

This Creamy Vegetable Soup Recipe is one of a quick soup recipe. You just need boiled vegetables, vegetable stock and few more ingredients and cook them. Delicious healthy vegetable soup is ready, you may serve it alone or with crackers.

Ingredients:

12 french beans (finely chopped)
2-3 medium boiled carrots (peeled and diced)
½ cup green peas (boiled)
2 tbsp butter
2 tbsp flour
1 cup milk
1 cup vegetable stock
Salt to taste
¼ tsp freshly grated black pepper
Grated cheddar cheese for topping

Procedure:

1. Heat butter in a heavy saucepan, add flour and sauté for a minute.
2. Add vegetables including french beans, carrots, green peas and sauté for few mins.
3. Then add milk and stock along with salt and cook till the soup gets boil.
4. When the soup gets thick, remove it from heat, pour into the soup bowl, sprinkle some black pepper and cheese.
