Roasted VegetablesPreparation time : 45 mins. | Serves 2 persons

This oven roasted vegetables is one of easy recipe of mix veggies to prepare at home, it just need to mix with the ingredients mentioned below and then put in oven for roasting. It is better if you add half a cup of vegetable or chicken broth in the veggies make the veggies soft and tasty.

Ingredients:

4 medium size potatoes (cut into large pieces)
1 cup carrots (coarsely chopped)
2 medium size onions (cut into square pieces and separate each layer)
2 medium size green bell pepper (cut into large cubes)
2 tbsp vegetable oil
1 tsp thyme
1 tsp oregano
1 tsp crushed black pepper
1 tbsp crushed red chili
1 tsp crushed fennel
Salt to taste

Procedure:

1. Preheat oven to 400 degrees F.
2. In a greased flat baking tray spread all the cut vegetables evenly.
3. Now sprinkle all the spices mentioned above onto the vegetables including oregano, thyme, fennel, red chili, black pepper and salt.
4. In the end pour vegetable oil onto the veggies and then place the tray in preheated oven for 30-40 mins. until all the water of veggies would have been dried and become crisp.
