This Italian recipe of Ratatouille Nicoise is prepared with eggplant, tomatoes, peppers and zucchini along with aroma of Italian herbs. The recipe is quite simple and consists of original vegetable flavors and thus is a healthy diet for every age group people.
⅓ cup olive oil
3 cloves garlic (chopped)
1 large onion (sliced)
2 zucchini (scrubbed and sliced)
1 small eggplant (peeled and diced)
3 tbsp flour
2 green peppers (seeded and cut into strips)
1 red bell pepper (seeded and diced
1 can Italian plum tomatoes
Salt and pepper
1 tbsp capers (drained and chopped)
Pinch of dried oregano
Pinch of dried thyme
1. Heat oil in large skillet and saute garlic and onion in it.
2. Toss diced veggies with flour including zucchini, eggplant and peppers.
3. Add the veggies into the garlic onion mixture and simmer for 40-60 mins. till vegetable become soft.
4. After that add tomatoes and cook uncovered over low heat until mixture gets thick then season with herbs and salt and pepper for about 10-15 mins.
