Zucchini or Ridge Gourd

Zucchini is found in different colors and has diferent names sometimes it is called Ridge Gourd and in Hindi it is usually called toree which is light green in color and its shape like cucumber. This Zucchini Recipe is very common in Indian cuisine and despite using less amount of spices, it still tastes great.

Ingredients:

1 kg zucchini (peel and cut into small square pieces)
3 onion medium size 9cut in julienne)
4 dry red pepper
Salt to taste
1/2 cup mustard oil

Procedure:

1. In a sauce pan, fry onions and dry red pepper in mustard oil until become light golden in color. To fry onions quickly add salt to the onion while frying when thy turn into pink color and constant stirring so that they fry evenly.
2. When onions have been fried, put the zucchini pieces and salt in the pan and mix them. Cover the pan and let it cook on low heat for 5 minutes.
3. After that, uncover the pan and stir the zucchini gently so that it becomes soft and pulpy. Keep on stirring, until all the water have been dried and oil starts to separate from the gravy.
5. When all the pieces od zucchini become slightly golden and turn into pulpy form or mash completely, turn off the flame and take out the zucchini in a beautifil dish.

Serving:

Serve the zucchini with flat bread/chapati or boiled rice.
