Dumplings
Preparation time : 45 mins | Serves 6 persons

Dumplings are prepared in almost every cuisine but they differ in many fashions like wrapping styles, stuffings and some variation in its sauce. In far East, dumpling filling is usually made from seafood meat with very little spices. Sometimes it is also called Wantons and is slightly different from dumplings but the method of preparation is same.So far these are the best chicken dumplings that I have made. These are very healthy for all age group as they do not have too many spices. You can also add vegetables in soup to make these dumplings more nutritious.

Ingredients:
Dumplings Filling:

250 gm chicken mince (fine)
1/2 cup finely chopped spring onions
1/2 cup finely chopped capsicum
2 tbspn of dark soya sauce
1 tspn salt
1 tspn crushed black pepper
1 tspn garlic paste

Dumplings Dough:
2 cup plain flour
3 eggs
Pinch of salt

Sauce:
2 cup chicken stock
1 tbspn dark soya sauce
1 tspn crushed black pepper
1 tbspn white vinegar/lemon juice
Salt to taste
1 tspn roasted sesame seeds
choped parsley for garnishing

Procedure For Making Dumplings Dough:
1. In a bowl, mix all the ingredients mentioned for dough and knead well using your hands just like pizza dough make sure the dough would not be soft. The should like pasta dough.
2. Take a piece of dough and roll it longitudinally using hands and put it into pasta machine. You have to make thin sheet (approx. 1mm thickness), so to make this you will have to pass the dough 7-8 times from your pasta machine roller by adjusting size every time.
3. When the sheet comes out of desired thickness, take its corner of one side and fold it to triangle shape and cut it. This is done to make perfect square shape and make 7-8 pieces of squares from a sheet otherwise, you can cut the sheet into small squares directly.

For Filling:
1. In a sauce pan, cook mince chicken with garlic paste and salt for 5-8 mins on medium heat.
2. In another bowl, mix all the ingredients mentioned for filling in the cooked chicken.

Making Dumplings:
1. Take a square sheet of dough and put a tbspn of filling in the center, coat the four corners with the egg whites so that when the corners fold diagonally it will stick well. After fold in triangular shape, join the corners of the base of this triangle shape dumplings.
2. Wrap the rest of the dumplings in the same fashion. The following video shows the right method to wrap the video although the video has different filling but it will try to help you in learning how to wrap dumplings.

Sauce:
1. In the same stock which is used for cooking dumplings, add all the ingredients shown for sauce and cook them for 10 mins at least.
2. In the end put the dumplings in the sauce and let it cook for 10 mins. After that take out the dumplings with sauce in a bowl and serve with different sauces you want. Enjoy these best chicken dumplings.
