This kaleji recipe is one of a spicy curry recipe which is specially prepared at the Eid-ul-Adha season. It is very healthy for anemic people as it contains lots of iron, it is not good practice to cook liver for long otherwise it would get hard. You can also use beef liver in that case cooking time increases to 10-15 mins. more.

Ingredients:

½ kg fresh mutton liver or kaleji (cut int cubes)
1 cup fried onions
½ cup yogurt
1 tbsp garlic paste
1 tbsp ginger paste
1 tsp red chili powder
1 tsp cumin powder
½ tsp black pepper powder
Salt to taste
1 tsp garam masala powder
¼ tsp nutmeg and mace powder
½ cup oil

Procedure:

1. Heat oil in a saucepan, add in ginger garlic paste and liver and cook for 1-2 mins.
2. Then add red pepper and yogurt, stir well and let it cook for 20-25 mins. till liver gets tender. Stir in between so that gravy would not stick to the pan. During last 5 mins. cook over medium heat and stir gently so that oil starts to separate from the gravy.
3. After that add in salt, cumin powder, black pepper, garam masala and nutmeg and mace powder and just for 3-4 mins.

Note: Don’t overcook the liver otherwise it would get hard and adding salt in early stage of cooking also cause hardness.
