This Mediterranean chicken is prepared with onion, olives, green pepper and tomatoes; you can also add fresh seasonal veggies to make it healthier. Instead of using seasoned canned tomatoes you can also add fresh diced tomatoes with italic seasoning.
1 lb boneless chicken (cut into strips)
2 tbsp olive oil
½ medium onion (chopped)
½ medium green pepper (diced)
1 clove garlic (minced)
1 tsp fresh rosemary (chopped)
1 can seasoned tomatoes
½ cup ripe olives (pitted)
1. Cook chicken with 1 tbsp olive oil, slat and pepper for 5 min at medium heat until become brown.
2. Remove the chicken from the skillet and then cook together onion, green pepper, garlic and rosemary with remaining oil for 3-5 min until onion become pink in color.
3. Now add chicken and seasoned tomatoes to the onions, adjust seasoning according to your taste and simmer for 5 min.
4. Serve the hot Mediterranean chicken with noodles or boiled rice.
