Preparation time : 60 min. | Serves 4 persons
This peri peri chicken is almost prepared with the same procedure as original peri peri chicken but instead of red chilies, used in original recipe, normal dry button red chilies are used. To get good taste you must marinate chicken well using your hands like doing massage so that the flavors easily absorb in the chicken.
1 whole chicken (cleaned and cut into 4 large pieces)
50 gm butter
1 tsp paprika
1 tsp black pepper
1 tbsp olive oil
½ tsp salt
2 tbsp garlic
2 tbsp lemon juice
For Peri Peri Sauce:
1 tsp Brown sugar
1 tsp garlic
½ tsp salt
½ tsp oregano
2 tbsp mustard paste
2 tbsp olive oil
10-12 red hot chilies whole stem less
4 tbsp vinegar
1. At first marinate chicken with butter, paprika, black pepper, olive oil, salt, garlic and lemon juice and leave as it is for at least 30 min.
2. Meanwhile prepare peri peri sauce for the chicken, for that you need to combine brown sugar, garlic, salt, oregano, mustard paste, olive oil, red chilies and vinegar and cook them together over low heat in a sauce pan until the sauce gets slightly thick .
3. Now take the marinated chicken pieces and cook them on preheated grill pan over medium heat until become brown from every side. You may also bake chicken in preheated oven.
4. After that when chicken has been done pour the prepared peri peri sauce over the pieces and bake for jus5 8-10 min in preheated oven at 400 degrees F.
