Hainanese Chicken RicePreparation time: 45 mins. | Serves 4-6 persons

This Singapore Hainanese Chicken Rice Recipe is the most popular meal in Southeast Asia. It is prepared in different steps; first chicken stock is prepared with skinned chicken, then rice is cooked with the same stock and then a hot spicy chili sauce is prepared. The rice and chicken itself have only salty flavor but the topping of chili sauce makes this meal hot.

Ingredients:

1 lb whole chicken with skin
1-inch piece of ginger
2 stalk spring onion (cut into halves)
Table salt as required

For Sauce:

1 tbsp oil
1 medium onion
1 tbsp ginger (finely chopped)
3-4 cloves garlic
2-3 tbsp red chili paste
2 tbsp lemon juice
¼ cup chicken stock
Salt to taste

For Rice:

1 tbsp sesame oil
3-4 cloves garlic
2 tbsp soya sauce
2 tbsp Worcester sauce
5 cups prepared chicken stock
3 cups rice (soaked in water for 30 mins.)
1 cucumber (peeled and sliced)
Salt to taste

Procedure:

1. To prepare chicken and stock, first thoroughly rub the chicken with table salt, then rinse it with water from inside and outside and pat dry.
2. Now in a stockpot, place the chicken with spring onion, ginger, and salt and put enough water to cover the whole chicken.
3. Cook the mixture until it boils, then reduce the flame to simmer and cook. until chicken.
4. When the temperature of the chicken reaches 170 degrees F, take it out from the stock carefully without breaking the skin and then immediately dip it into the ice water. This is done to stop cooking chicken further. Reserve the chicken stock it will be used to cook rice and sauce.
5. Slice the boneless part of the chicken to serve with rice.
6. Now to cook rice; heat oil in a saucepan, sauté ginger, and garlic until fragrant, then add rice and fry until mixed thoroughly.
7. After that add soya sauce, Worcester sauce, and 5 cups of reserved chicken stock to the rice, cover, and cook over high heat until almost all the stock absorbs in the rice then reduce the heat to simmer and cook for 8-10 min. until the rice is completely done.
8. Meanwhile, prepare chili sauce, heat oil in a frying pan; add ginger and garlic and sauté until fragrant.
9. Add chili paste, lemon juice, salt, and chicken stock and cook until the sauce becomes a little thick. The chili sauce is now ready.
10. When all the ingredients are ready, now is time to serve the Hainanese Chicken Rice, take out a bowl of rice onto the platter, place cooked chicken slices and cucumber slices onto the same platter, and drizzle the prepared chili sauce over the chicken.
