Chile Con QuesoPreparation time : 80 mins. (approx.) | Serves 1 large bowl

This Queso Recipe is prepared in crockpot with adobo style seasoning, homemade rotel tomatoes and ground beef. Quick queso dip can be prepared with sausages and ready-made rotel in a stockpot. It is usually served with nachos.

Ingredients:

1½ lb tomatoes (peeled & diced)
1 small onion (finely chopped)
1 medium bell pepper (finely chopped)
2 tbsp white vinegar
½ tbsp salt
3 jalapeno peppers (chopped)
6 tbsp sugar
32 oz velveeta cheese
8 oz cream cheese
1 can cream of mushroom soup

For Ground Beef:

1 lb ground beef
¼ tsp onion powder
¼ tsp garlic powder
1 tsp sweet paprika
¼ tsp ground black pepper
¼ tsp chipotle chile powder
½ tsp dried oregano
½ tsp ground cumin
2 tbsp olive oil

Procedure:

1. In a stockpot, add first seven ingredients and let it boil over medium heat then reduce the heat to simmer and cook for 30 mins.
2. In a saucepan, heat oil and cook ground beef with the spices mentioned for making beef for 8-10 mins. until the beef gets brown.
3. Then in a crockpot, add velveeta cheese, cream cheese, cream of mushroom soup, cooked ground beef and stockpot mixture and cook over low setting for an hour or until cheese melts and all flavors incorporate well.
4. Serve the hot queso dip with nachos.
