Chicken-And-Vegetable-Pie

Preparation time : 40 min. | Serves 4-6 persons

This chicken and vegetable pie is prepared in the same fashion as other pie just difference in ingredients. In this recipe chicken is used along with veggies including bell peppers and mushrooms. You can add more veggies according to your taste and adding white sauce or cream cheese to the filling makes it more delicious.

Ingredients :

For Crust:

1 lb boiled potatoes (mashed)
1 cup flour
1 tsp black pepper
1 tsp salt
2 tbsp butter

For Filling:

1 cup boneless chicken
2 hard boiled egg (mashed)
1 cup red capsicum (cubed)
1 cup green capsicum (cubed)
1 cup orange capsicum (cubed)
1 cup cheddar cheese (grated)
½ cup butter mushrooms
1 tsp black pepper
1 tbsp soya sauce
1 tbsp chili garlic sauce
Salt to taste
2 tbsp oil

Procedure:

1. In a large mixing bowl combine mashed potatoes, flour, black pepper, salt and butter and mix them well..
2. tightly press this mixture into the pie dish and reserve some mixture to cover the filling.
3. Now heat oil in a pan, cook chicken in it over high heat till become dry and light brown in color.
4. Add in mushrooms, red capsicum, green capsicum and orange capsicum along with seasoning of black pepper, salt, soya sauce, chili garlic sauce and boiled eggs. Cook over high heat for 5 mins. just to incorporate the ingredients well.
5. Now spread the chicken and vegetable mixture over the prepared pie base, spread grated cheese and then cover with the remaining crust mixture.
6. Place the dish in preheated oven for 15-20 min at 300 degrees F.
