This Bon Bon Chicken recipe is taken from Chinese cuisine where it is also known as Bang-Bang Chicken. The recipe is very simple you just need to cook all ingredients together with the chicken and then shred chicken pieces before serving. This chicken is usually served with rice which is cooked with the residue left from the chicken.
1 lb skinned chicken breast and thighs mix
1 onion (chopped)
4 cloves garlic (chopped)
1 tsp sesame oil
¼ tsp ground Sichuan Peppercorn
1 tsp toasted ground sesame
2 tbsp dark soya sauce
1 tbsp brown sugar
Salt to taste
1 cup water
4 tsp chili oil
Spring onion slices for topping (optional)
Fresh coriander leaves for topping (optional)
1. In a large saucepan, add all the ingredients except chili oil into the pan and let it boil. Then reduce the heat to simmer, and cook covered for 20-30 mins. or until chicken is cooked completely.
2. Take out all the chicken pieces from the pan leaving liquid mixture in the pan. Let the chicken cool to room temperature and then remove the skin using Chinese wooden stick or a rolling pin.
3. When all the skin has been removed, remove bones and cut the chicken into long strips.
4. Take out the liquid mixture from the pan into the serving platter, put chicken strips on it, drizzle chili oil and serve with topping of green onion slices.
