This chicken tacos recipe is one of a quick and easy recipe to prepare at home and is a wonderful dish when you are hungry or you need to prepare some goof food for your friends in short time.

Ingredients:

1½ cup shredded chicken breast (from a rotisserie chicken)
1 chipotle chili
1 tbsp adobo sauce
1/3 cup mayonnaise
8 hard taco shells
¼ cup Mexican-blend shredded cheese or cheddar cheese
½ cup chopped lettuce
1 plum tomato (chopped)
¼ cup sweet corns
2 scallions (sliced)

Procedure:

1. In a warm chicken add chipotle chili, adobo sauce and mayonnaise.
2. Spoon 1-2 tbsp of prepared chicken mixture on the center of each taco shell and top with cheese, scallions, corns and tomatoes. Serve immediately with salsa.
