This lobster roll recipe is not much different from any chicken spread sandwiches except the difference of meat. This roll has some more taste due to the difference in meat as seafood and specially lobster has great taste.
½ cup mayonnaise
2 tsp lemon juice
1½ tsp Dijon mustard
1 tsp olive oil
¾ tsp fresh tarragon (chopped)
¼ tsp liquid hot-pepper sauce
¼ tsp salt
⅛ tsp freshly ground black pepper
1 whole lobster (cooked and shredded)
4 soft frankfurter rolls
1. To prepare lobster dressing for roll, whisk together mayonnaise, lemon juice, Dijon mustard, olive oil, tarragon, hot-pepper sauce, salt and pepper to make smooth batter.
2. Add cooked lobster into the dressing and mix well, cover the mixture with plastic and place it in fridge for an hour.
3. Now cut each frankfurter roll into two pieces and stuff them with the prepared lobster mixture, add tomato slices and salad leaves between the rolls before putting mixture and serve with cole slaw, fries and ketchup.
