This recipe for laksa is a great combination of chinese and malay cuisine and is one of famous food in Far Eastern countries. the recipe is very rich as it has flavors of prawns, noodles, tofu and egg.

Ingredients:

1 tsp turmeric
1 tsp chili powder
1 tsp coriander powder
3 boiled egg
½ cup coconut milk
1 onion (chopped)
4 – 5 cloves garlic (chopped)
1” ginger piece (chopped)
4 – 5 fresh red chilies (ground)
200 gm prawns
2 – 4 tbsp oil
1 tsp sugar
½ packet cooked noodles
1 cup bean sprout
Salt to taste
¼ tsp black pepper
½ cup chopped spring onion
½ tsp lemon skin
2 tofu cubes (fried)
¼ bunch mint leaves

Procedure:

1. Blend together first nine ingredients including onion, red chilies, boiled egg, ginger, garlic, chili powder, turmeric, coriander powder and coconut milk. Make smooth paste.
2. Heat oil in a wok, add prawns and fry for 2-3 mins. till their color is changed to pink then remove from heat and set aside.
3. Now in the same wok, add prepared egg paste, cook it well for 2–3 mins. over high heat, then reduce the flame and simmer for 5-10 mins.
4. After that add remaining ingredients including chopped spring onion, boiled noodles, bean sprout, fried prawns, salt, black pepper and 1 tsp sugar. Mix them well when bubbles starts to appear turn off the flame, add in fried tofu and lemon skin.
5. Serve the hot Laksa with topping of mint leave, prawns and boiled egg.
