This pasta tuna salad is one of a great summer salad as it is served after chill and is a complete meal for lunch. You may add veggies of your choice but adding tuna is must.
6.5 oz white tuna packed (drained and finely flaked)
½ lb cooked elbow macaroni
2 hard-boiled eggs (mashed)
½ medium red onion (minced)
½ cup celery (chopped fine)
¼ cup bell pepper (chopped) (any color)
½ cup green olives (chopped fine)
1½ cup mayonnaise
Salt and pepper to taste
Paprika for garnishing
1. Take a large salad bowl, combine all ingredients and mix well.
2. Chill the salad for at least 2-3 hrs. and sprinkle some paprika on top just before serving.
