Chili Colorado Recipe is prepared in Mexican cuisine in which beef cubes are cooked in red spicy gravy. To enjoy its good flavor serve it with fresh tortillas.
2 -3 lbs beef shoulder (cut into 1-inch cubes)
½ cup flour
4 tbsp oil
5 tsp chili powder
2 tsp ground cumin
2 tsp garlic powder
1 tsp onion powder
6 oz tomato paste
2 cup water
Salt and pepper to taste
1. Dust beef cubes with flour and put it onto the strainer. Shake the strainer to remove extra amount of flour.
2. Then heat oil in a heavy bottom pan and cook beef cubes till become brown in color. Keep stirring while cooking to give even brown color.
3. Now start adding spices including chili powder, ground cumin, garlic powder, onion powder, tomato paste and water. Bring the mixture to boil then add seasoning of salt and pepper and simmer for about 90 mins. till beef is tender completely.
4. Spicy chili colorado is ready to serve with topping of green chilies and mexican rice.
