This Slowcooker Chicken recipe is prepared with green salsa, pickled jalapeno and white beans thus has little more spicy flavor than other slowcooker chicken. The recipe can also be prepared with cream of chicken soup which makes the sauce little thick and creamy.
4 chicken breast halves
2 onions (chopped)
32 oz. chicken stock
2 bell peppers (chopped)
1 cup pickled jalapeno (sliced)
4 oz green chilies (chopped)
32 oz green salsa
30 oz navy beans (drained)
1 cup sour cream
½ cup cilantro (minced)
1 tsp cumin
½ tsp oregano
Cheddar cheese for topping (shredded)
Sour cream for topping
1. In a slowcooker put chicken breast, green chilies, bell pepper and pickled jalapeno along with chicken stock and salsa on top and cook on low for about 6 hrs. till chicken is tender.
2. After that take out the chicken pieces from the mixture and shred them using fork.
3. Return the shredded chicken back to the cooker and then add remaining ingredients including cumin, oregan, white beans, sour cream and cilantro. Cook for a while to mix well.
5. Take out the hot and spicy slowcooker chicken into the serving bowl and top with shredded cheese, sour cream and tortilla chips.
