Blistered TomatoPreparation time: 10 mins. | Serves 4 persons

This Blistered Tomatoes recipe is a quick and easy recipe made with tomatoes, feta, and some seasonings. It is usually prepared with cherry tomatoes like grape or peat tomatoes which are easily available.


3 tbsp vegetable oil
3 cups grape tomatoes (mix of yellow and red)
4 cloves garlic (thinly sliced)
4 oz Greek feta (crumbled)
1 tsp dried oregano
Pinch of cayenne
Salt and fresh ground pepper to taste
2 tbsp chicken broth


1. Heat the oil in a pan over medium-high heat, add tomatoes, and start to splutter. Cook for 5 mins. until the tomatoes blister and their skins begin to char,
2. Add garlic cloves and sauté for a minute, then add oregano, cayenne, salt, and pepper and mix well.
3. Remove the pan from heat and add feta cheese and broth.
4. Blistered Tomatoes are now ready to serve.
