Thai peanut chickenPreparation time : 20 mins. | Serves 4 persons

This Thai Peanut Chicken is prepared with Catalina dressing and peanut butter. It can be served with boiled rice or with chili garlic sauce to make it spicy.


2 boneless chicken breasts (cut into small pieces)
1 ½ cup water
10 oz can chicken broth
2 tbsp soy sauce
1 tbsp peanut butter
225 gm spaghetti (uncooked)
2 cup broccoli florets
1 cup thin carrot slices

For Catalina Dressing:

2 tbsp ketchup
½ tbsp sugar
¼ tbsp vinegar
Salt to taste
1 tbsp chopped onion
Pinch of celery seed
Pinch of paprika
Few drops of salad oil


1. Blend all the ingredients of catalina dressing to make smooth paste.
2. In a large pan, heat 2 tbsp of catalina dressing and then cook chicken in it for 5 mins until all the water of chicken would have been dried and chicken pieces turn into white in color,
3. After that add remaining catalina sauce, water, chicken broth, soy sauce, peanut butter and spaghetti and simmer for 5-8 mins.
4. Add broccoli and carrots to the spaghetti and chicken mixture and simmer for further 5 mins until pasta and veggies become tender.
