These fruitcake cookies are prepared with lots of healthy flavors besides candied fruits; it includes pecans and coconut flakes which makes these cookies more yummy. You also add nuts or raisins of your own choice.
3 cup chopped pecans
2½ cup sweetened flaked coconut
2 tablespoons cornstarch
1¼ cup chopped candied cherries
1¼ cups chopped candied pineapple
1 cup chopped dates
1½ – 2 cup sweetened condensed milk
1 tsp vanilla extract
1. Combine all the ingredients in a mixing bowl and mix using wooden spoon.
2. Grease paper-lined muffin cups and fill each cups up to ⅔ level.
3. Bake in preheated oven at 300 degrees F for about 25 mins. until they get golden brown from top. Then take them out from oven and cool to room temperature. You may preserve them in airtight containers at room temperature.
