Preparation time : 90 min | Serves 4 medium jars
This chili sauce recipe is prepared with red ripe tomatoes, different flavors of red pepper and pickling spices hence has yummy salty, sweet and sour taste. This chili sauce can be used in preparing soups, sandwiches, or even in place of pizza sauce.
4 qt red ripe tomatoes (peeled)
2 cup onions (chopped)
2 cup sweet red peppers (chopped)
1 hot red pepper
1 cup sugar
3 tbsp salt
3 tbsp mixed pickling spices
1 tbsp celery seed
1 tbsp mustard seed
2½ cup vinegar
1. In a large sauce pan cook together tomatoes, onions, sweet and hot peppers, sugar and salt.
2. In a muslin bag put all the remaining spices and tie it tightly from top so that spices would not leak into the mixture. Add this bag of spices in the tomato mixture and cook over medium heat until the mixture starts to get thick. It would table 40-50 min.
3. After that add vinegar and cook for further 15-20 min to make it thick.
4. Pour the prepared chili sauce in jars (cleaned properly) and cover them tightly. Put the jars in boiling water for further 15 min then store in fridge after cool it to room temperature
