This Mashed Potato Pie Recipe is a simple and easy recipe that only takes time in baking. To make this fluffy light pie, you just need to combine ingredients and bake for at least half an hour. Then your pie will be ready to serve. To save time you can also use ready-made mashed potatoes instead of making the potato batter separately.
2 cups mashed potatoes
2 cups cottage cheese
½ cup sour cream
1 tsp salt
½ cup shredded cheddar cheese
¼ cup seasoned bread crumbs
1 tsp Italian seasoning mix
1. In a large mixing bowl, combine mashed potatoes, cottage cheese, sour cream, eggs, and salt. Beat the mixture until becomes smooth.
2. Now take a greased casserole dish or pie dish, transfer the potato mixture in it, and sprinkle the seasoned bread crumbs, cheese, and Italian seasoning mix on top.
3. Place the dish in preheated oven at 375 degrees F for 30-40 mins. or until the cheese melts and the top turn golden brown in color.
