This Chicken Goulash recipe is an old fashioned style Hungarian soup with only difference of chicken in place of beef. This recipe is quite simple rather than other variety of goulash. Its basically a stew of meat, noodles, corn or beans along with some seasoning of spices. So you can add some other ingredients too to make your soup according to your flavor.
1½ lb ground chicken
1 can petite diced tomatoes
1 medium onion (diced)
1 lb elbow macaroni
1 can of corn (drained)
1 tsp chili powder (or to taste)
Salt to taste
1 tsp black pepper
¼ cup oil
Chopped fresh cilantro for garnishing
1. Fry onion in a heavy saucepan till gets light brown.
2. Then add ground chicken and stir to well. Cook for 3-4 mins over medium heat until become white and dry.
3. Now add rest of the ingredients along with 2-3 cup of water (or enough to cook macaroni) and let it boil. Then reduce the heat to simmer and cook for 10-12 mins. more until macaroni are done.
4. Serve the hot Chicken Goulash with boiled rice and topping of fresh cilantro.
