Chicken TarragonPreparation time 30 mins. : | Serves 4 persons

This Chicken Tarragon is prepared in a very simple manner with the strong flavor of tarragon. The chicken is first marinated with few ingredients then fried with little butter and oil. Tarragon sauce is separately cooked and served as topping of this chicken. You may also use grill pan for cooking the chicken fillets.


2 lb boneless chicken thighs
6 cloves garlic
Salt To taste
1 tsp crushed black pepper
1 tsp dried tarragon
3 tbsp butter
3 tsp oil

For Sauce:

2 tbsp butter
1 medium onion (finely chopped)
1 tsp oil
3/4 cup chicken stock
Salt To taste
1 tsp crushed black pepper
1 cup cream
2 tsp fresh tarragon


1. Marinate chicken fillets with salt, pepper, garlic and tarragon and leave for at least 15 mins.
2. After that heat butter and oil in a pan and fry the marinated fillets over medium heat until become light golden from both sides, it would take 10-12 mins.
3. When chicken is done, add butter and oil in the same pan to prepare sauce. Saute onion till becomes soft and transparent.
4. Then add chicken stock and tarragon along with salt and pepper and simmer for 3-5 mins.
5. Add cream to the sauce and whisk well. Simmer for 2-3 mins. more.
6. To serve the chicken tarragon place the cooked chicken fillets onto the servign platter and pour the prepared sauce over the fillets.
