This mashed potato pancakes recipe is crispy and soft potato pancake. To make light and crisp pancakes it is necessary that you should knead well the mashed potatoes with cream cheese and sour cream. When the batter become light and fluffy then mix rest of the ingredients to prepare pancakes.
2 cup mashed potatoes
3 oz cream cheese
2 tbsp sour cream
2 tbsp chopped onion
Salt and freshly ground black pepper to taste
1 tbsp olive oil
1 tbsp butter
1. In a mixing bowl, combine mashed potatoes, cream cheese and sour cream to make it smooth and creamy texture.
2. Add onion and seasoning of salt and pepper to the mixture and mix well.
3. Take a large pancake pan or skillet and heat oil with butter, when melted drop 1 tbsp of prepared mixture onto the pan and make it flat using back side of spoon to give it pancake shape. Fry it for 8-10 min from both sides to make it golden brown and crisp.
4. Serve the hot mashed potato pancakes with yogurt or mayo dip.
