Minestrone-SoupPreparation time : 2.5 hrs (approx.) | Serves 6 persons

This Minestrone Soup Recipe is prepared with beef flavor which you can also replace with chicken to reduce cooking time. The soup is one of a typical one which require lots of healthy ingredients and lot of time for cooking but in the end it would be wonderful healthy food recipe.


2 lb beef soup bone
2 lb shin beef (cut into cubes)
4 quart water
1½ lb tomatoes (peeled)
15 oz tomato sauce
2 onion (chopped)
¼ cup chopped parsley
2 cloves crushed garlic
¼ tsp pepper
2 tbsp basil leaves (crushed)
2 cup sliced carrots
4 cup uncooked Macaroni
2 pkg Italian Green beans
10 oz Green Peas
2 cup sliced Celery
1 lb can Red Kidney Beans
2 tbsp salt


1. In a large 8 quart pan boil bone and shin beef with water and then remove all the fats that come on the surface.
2.After that tomatoes, tomato sauce, onion, parsley, garlic, salt, pepper and basil and let them cook till the mixture starts bubbling, then reduce heat to simmer and let it cook for 90 min.
3. Then remove meat and bones and cut meat into pieces then return to soup.
4. Add macaroni, green beans and peas and simmer for 20 min until they cooked well then stir in
kidney beans and turn off the flame after 5 min. Delicious minestrone soup is ready to serve with your favorite bread.
