This mushroom soup recipe is a rich cream of mushroom soup prepared with dense rich chicken stock. You may also prepare this soup by blending the mushroom after become soft and then cook with seasoning.
2 lb mushrooms (peeled and diced)
2 ltr rich chicken stock
1 tbsp flour
1 tbsp butter
1 tsp salt
½ tsp pepper
½ cup whipped Cream
Croutons for topping
1. In a heavy sauce pan, boil mushrooms with stock over medium heat. Reduce the heat and cook until mushrooms become soft.
2. Dissolve flour in 1 tbsp water and add it to the mushroom mixture. Stir continuously till the soup starts to thick then add salt, pepper and butter and simmer for 5-8 min.
3. Remove the pan from heat add whipped cream and mix gently serve the hot mushroom soup with topping of parsley and croutons.
