The recipe for gazpacho is taken from Spanish cuisine which is basically a tomato soup with some flavor of other veggies. The important point of this recipe is you don’t need to cook the soup, just blend and strain and you got the healthy delicious soup.
10 oz bread (soaked in milk or water)
21 oz tomato (chopped)
2 cloves garlic
2 onions (chopped)
2 red and green peppers
1 cucumber (cubed)
7 tbsp oil
2 tbsp vinegar
1½ tbsp water
1 tsp cumin
Salt to taste
1. Using a masher, mash cumin, garlic and the soaked bread.
2. In a bowl, mix onion, tomato, oil, vinegar, the salt and the mashed bread mixture.
3. Blend the mixture in blender with water and strain using strainer to get the smooth paste.
4. Now pour it into bowl and refrigerate for 15 mins. Serve the Gazpacho with topping of cucumber, pepper and croutons.
